There have been few changes to the staples of the diet of South Pacific Islanders since the Europeans arrived in the 18th century, and across the region, the same meals are eaten and prepared in the same way as they have been for hundreds of years.
Typically, meals are based around staples such as breadfruit and taro, mixed with many of the exotic fruits from the islands, and augmented with fresh fish and lobsters caught in the coral atolls, as well as domesticated animals such as pig. (Dogs have been pretty much removed from the diet of the locals, and their stringy meat replaced in most recipes with Corned Beef).
Traditionally, meals were cooked in an underground oven called a Himaa, or Umu, which involves them being wrapped in leaves, placed on hot stones and then buried until they are steamed to perfection.
Meals are eaten as a family, and as in many Asian countries, you are expected to use your right hand only to feed yourself with (although nowadays, knives and forks are commonly used).
